Pizza!

You have a round of nice homemade pizza dough, waiting to be rolled out, topped, and baked. What do you put on it?

Arugula, gorgonzola, red onions, balsamic vinaigrette, and toasted walnuts.

Or, sweet potatoes, pasilla peppers, feta, and lime oil.

Olive oil, rosemary, sea salt.

Alfredo sauce, cooked tortellinis, chicken, mozzerella, scmorza (specialty of a place I worked at).

red sauce, ricotta (well drained), spinach (ditto), sausage, mozzerella.

bacon.

Personally, I usually opt for a good pepperoni, jarred pasta sauce, and mozzerella with some romano on top. I put garlic powder and black pepper on the crust; sometimes some powdered parmesan as well.

homemade pesto, corn cut off the cob, red onion, feta or chevre, mozz, parm, and pepper salami.

the corn is Fattest's idea, and it always rocks my socks.

I'd defrost some of the homemade tomato sauce, and grate some mozzarella and provolone. Maybe some good pepperoni, maybe some thinly sliced bell pepper, maybe some mushrooms sauteed with garlic in butter.

Or maybe I'd go the whole hog, take out the cast-iron pan, and make a Zachary's-style stuffed pizza. Using the defrosted home-made tomato sauce, of course.

My favorite pizzas as of late have been:

- Bacon, caramelized or roasted garlic, gorgonzola, and spinach.
- Figs (green or purple), a dry cheese (usually a mix of sharp cheddar and parmesan), and garlic and scallions. Sometimes with prosciutto, too.
- Pesto, chicken, spinach, bell peppers, garlic, scallions, a dry cheese.
- Pesto, kale, garlic, scallions, tofu, mozzarella.

Um. I make a lot of pizza!
