1. Sloppy Joes a la Mom

(mom says she always doubles this)

1 lb ground beef
3/4 tsp salt
1/4 cup onion, chopped fine
1 cup ketchup
6 oz tomato juice
2 Tablespoons brown sugar
1 teaspoon sugar
2-3 drops vinegar
1 teaspoon Worchestershire sauce
1/4 cup water

Brown the beef and onions. Drain the fat. Add the rest and simmer for a while.

(I recently came across another recipe that I am going to try soon. I'll report back!)

2. Crisp Topping

from Deborah Madison's Vegetaarian Cooking For Everyone. I always double this too.

6 Tablespoons butter, cut into 1/2 inch chunks
3/4 cup brown sugar, packed
2/3 cup flour
1/2 cup rolled oats or chopped nuts
1/4 teaspoon salt
1/2 teaspoon grated nutmeg
1 teaspoon ground cinnamon, optional (not!)

Work the butter into the rest of the ingredients with your fingers until each piece is coated and you have a coarse, crumbly mixture. Use to cover a shallow baking dish of sliced fruit (and sugar, if needed).

I've used that crisp topping recipe on a rhubarb crisp. Highly recommended!

I've been noticing the combo of Worchestershire, vinegar and molasses or brown sugar in many American recipes. I'd been thinking about it when I was trying to concoct a vegetarian substitute for Worchestershire. It also involved vinegar and molasses.

Interesting problem.
