Please give me a dish to go with the following:

1. Red cabbage salad (of some sort)

2. Sweet potato fries

And, as a bonus, tell me what you'd do with one large bulb of fennel.

Grill the fennel and serve with rosemary chicken?

Caveat: I am no chef. It sounds appetizing to me, but if not to you don't do it!

Chicken and rosemary has its appeal (and its other fans below). Grilling is out until the rainy season is over, though.

Didn't realize it was raining there. You should see the flooding here in Maui!! It's shocking, especially when the meteorologist had said in early 2010 that this year would be another one with no rain.

Fennel salad! Slice thin, longitudinally, dress with good olive oil, salt, and pepper if desired.

Some sort of grilled meat - pork chops or chicken with rosemary.

A burger. Grilled tofu.

IOW, chewy protein.

Pork chops were my first thought.

It's a fine thought, but I am pork chopped out at the moment.

Chicken sausages? There are some very nice ones available from Trader Joe's.

Sausages.

As far as the fennel, I'd let it sit in the fridge til it rotted, then give it to the chickens. At least, that's what I did last time I had a fennel bulb.

I'm leaning heavily toward sausages.

Bratwurst! And cook the fennel with them in an apple cider/water mix.

Sausages is a good idea! Thanks.

All good suggestions, but I think I'd go with sausages, preferably smoked (Pretty much everything is better smoked, right?)

For the fennel, slice it thinly (longitudinally or latitudinally, doesn't matter), brush with olive oil, sprinkle with sea salt and roast.

I think sausages are going to win this round.

Roast pork would go with both red cabbage and sp fries.

Fennel: slice thinly and stuff a whole fish with it, add a little garlic and some olive oil, bake.

I am a little, uh, overporked at the moment, but I have a feeling that the red cabbage will keep making an appearance even after I've recovered. The fish idea sounds interesting too!

Salmon in parchment paper with fennel and cucumbers, dash of white wine vinegar and EVOO.

Marinate the salmon, cucumber and fennel for about 30 minutes before you cook for more flavor. add a quick squeeze of fresh lemon before serving. Yum! And it makes no dishes, a big plus.

I did a slaw with sliced fennel, supremed blood oranges, kalamata olives, and some pepitas last year. The pepitas were a miss as they were a little rancid but I wanted some crunch to go with the fennel so I'd probably scare up pine nuts if I did it again.

As for sweet potato fries, I eat them with burgers.

I don't cook the burgers (or the sides to go with) in this house at the moment :)

The other day I made a tomato soup with halibut and fennel. Saute onions, fennel, and garlic. Add a bunch of chopped tomatoes and some stock. While it's cooking, sear some halibut fillets then chop them into bite-sized pieces. Add to the soup and serve.
