Food interlude: fava beans
Apr. 22nd, 2004 03:39 pmWe have entered the season of the fresh fava bean.
I can make a pasta sauce out of fava beans. I can make a risotto. I can make a yummy fresh fava bean salad, and I can make a fava bean puree. I can throw them into soup (except I already have a big container of frozen minestrone from the last batch I made). Best of all, I can saute fava beans with prosciutto, mortadella, pancetta, or even bacon, and some herbs (mint!), and eat it all up.
What else can I do with fava beans? Any suggestions? Anything that works with limas (yuck) will also probably work for fresh favas.
