OK, I lied. The *real* cooking challenge of the week is:

Beets.

Although if anyone out there loooooves beets, I will be happy to adopt them out instead. 'cuz, you know, in seven years of trying, I have never come up with a preparation of beets that I find more than merely tolerable.

I was so happy when we had a compost heap, because then I didn't feel guilty throwing away the beets. They just went to make flowers, and new vegetables that I actually *enjoy* eating.

I'm not giving away the greens, though. I am convinced that we habitually eat the wrong end of the beet. I adore beet greens. A little onion, a little parmesan, maybe some raisins and/or walnuts or pine nuts, and some linguine...yes, the pasta does turn pink, but that just adds to the charm.

(Also in the box this week: two bell peppers, a bunch of carrots, apples, salad greens, loose spinach, a half-pound of pistachios, one onion.)
