P.S. if you happened to have a head of escarole in your fridge and didn't want to waste it, what would you do with it? Often in the past I've added it to risotto, but I'm not feeling much up to risotto these days.

Escarole soup, a great Italian specialty. Also very easy.

Heat chicken broth.

Add escarole.

Eat.

You could make it into an escarole and white bean soup or just escarole with white beans, lots of garlic, and a mild Italian sausage works just as well and is very easy to cook up. I like to add a fair amount of black pepper to it if you skip the sausage.
Good luck! And I think you just made me hungry for escarole too. Too bad it's out of season in upstate New York!

If you have a freezer, you can always throw last week's fading greens together to make a vegetable stock.
