I have a new favorite basic cookbook: How to Cook Everything by Mark Bittman.

I am only halfway through it, but I already know I am going to be feeding myself better because of it.

Bittman is the perfect recipe writer for me: he loves food and doesn't compromise on flavor, but also eschews fussiness.

He makes me wish for a chest freezer, though. Must freeze stock and beans!

I like Bittman too. He is doing an amusing series where he cooks with fancy restaurant chefs - they do a big complicated dish, and Bittman does his in an hour. I have one of his ckbks, but not HT Cook everything. Must check it out.

In my crowd of friends (and Friends), it's generally referred to as "The Book." I've been thinking about getting it, sooner or later.

You might also like Alton Brown's I'm Just Here for the Food. He's big on flavor, not fussy (almost anti-fussy), and he describes a lot of the theory behind the various ingredients and techniques. And he's funny.

Sorry, but Alton Brown gets on my nerves. And from what I've seen of his TV show, he actually is fussy (and snobbish!), he just covers it up with humor.
