fun with food
Aug. 30th, 2005 09:54 amSunday night, I took the strong fish stock I made and improvised a fish stew around it.
Into the stew:
* one red onion, sauteed in a little olive oil
* one stalk of celery, sauteed in the same batch
* many cloves of garlic (which were supposed to be sauteed, too, but I forgot and just dumped them in later)
* fish stock
* two cans of canned diced tomatoes, plus a little diced fresh (I would have preferred crushed, but didn't find any in the pantry)
* a can of sardines
* a large amount of fresh corn
* about half a pound of small yellow potatoes, quartered
* three diced zucchini
* a pound and a half of white fish fillets (mostly rock cod)
* a handful of fresh parsley
* salt, pepper, and some spices which I've forgotten
It wasn't spectacular, but it wasn't bad. The biggest problem is that it made a lot. A *lot*.
Continuing the fish theme, last night I made tuna casserole. Post-migraine, I was craving comfort food.
I did not make the canned-soup kind. No, I made a cream sauce and mixed it with the noodles and vegetables. I cooked the mushrooms (which, in a concession, I did buy pre-sliced) with butter and sherry. The sherry stood out in the finished dish; I might use brandy or something next time. I dumped frozen peas right into the sauce before folding into the noodles.
I topped it all off with wheat bread crumbs and cheap grated cheddar. It was really good, and exactly what I wanted.
It also made a lot. I think I will have it for lunch tomorrow, but there will still be more left.
