What would you do with a couple pounds each of pistachios and almonds (and, while we're at it, walnuts)?

That's too bad. [livejournal.com profile] misia made a very good baklava a few months ago. It was quite yummy. And it would be a good way to handle the pistachios and almonds at least. :>

Just because in intimidates me doesn't mean I won't try :)

I've only ever had baklava with walnuts or pistachios. Almonds, too? Interesting.

I'd give away the pistacios; I don't really like them.

I really like candied walnuts in salads, especially something like apple and gorgonzola salad.

Can you turn the almonds into almond butter?

I think I might have to blanch the almonds, and then certainly apply pressure, before they became almond butter. Alas.

A couple of recipes that use pistachios (unfortunately in small doses):

Turkey (originally chicken) meatloaf: this is sort of an apple and carrot type of meatloaf that's rather a bit lighter than beef meatloafs, and one puts half the loaf in the pan, covers it with pistachios, and puts the other half in.

Carrot pudding: an Indian sort of dish, involving milk and coconut milk and sugar and coriander and an ungodly amount of carrots and a quarter-cup of pistachios.

In both cases, they add a nice crunch texture to something that would otherwise be completely mushy, and they seem to go well with the flavors of both of the above things. Maybe would also work in turnips, as an odd random thought....

Send the pistachios to me. I ADORE pistachios.

Pistachio crusted chicken breasts.
Almond cheese cake.
Maple-walnut scones.
Butternut squash ravioli with Walnut Alfredo sauce. (The sauce is nice on linguine, too, but with squash ravioli it rocks my world.)
(Walnuts go wonderfully well in salad, too.)

Oh, and if you're about it, invite me to dinner! *grin*

I love pistachios, too; I can actually easily polish off a pound of unshelled pistachios in a night, along with some thinly sliced oranges -- my favorite snack. It somewhat boggles my mind that I nonetheless *still* have a couple pounds of 'em left in my freezer.
