I made a gastrique today! For pork tenderloin and apricots. That will be happening again.

Mmmmmmm, apricots. Pork, maybe later...

It turns out a gastrique is basically a sauce made of caramelized sugar and vinegar. Sweet and sour. Very nice with fruit.

Huh. I had some strawberries with a very short life so I sliced 'em and added them to the pork chops. They did that magic make-their-own-syrup thing and it was very tasty!
