Food Question of the Day

(No, I am not suddenly suffering from
brisingamen's problem of having over-the-hill veggie leavings palmed off on me via the box. They warned us that this might happen, actually, with the first sweet potatoes of the season, because they can't tell how big they're getting in the ground.)
Other box items this week:
red bell peppers, two varieties
green beans
beets and beet greens
two tomatoes (one is *very large*)
onions
many apples
This is a summer-to-winter transition box; the farm says their fall crops are for the most part not quite ready yet, but the summer staples (notably tomatoes) are tapering off. I can't wait for some more greens.
I have plans for the green beans, many of the peppers, and the tomatoes, so I am thinking perhaps something with greens and sweet potatoes? But that's only a vague thought at the moment.
I am, as usual, looking to get rid of the root end of the beets. Any takers?
