I'm starting to think I should have a disclaimer to my LiveJournal: do not read if you are hungry. This is one of those entries.

I accidentally made a transcendent dinner last night.

It's a really simple potato stew. Onions, bell pepper, bay leaf, paprika, tomato, roasted garlic...and finished off with a can or two of sardines, if you like. Cook the bell pepper and onion until soft, add everything else except the sardines, plus some water, and cook for a half hour. Add the sardines and heat through. That's it. (Quantities available on request). But it was *so* good. No fair. It's supposed to be a humble, no-frills dish.

It takes a whole head of roasted garlic. I tried a new technique to do this quickly: put the garlic under the broiler and cook until charred all over (turn a couple times with tongs). It took like 10 minutes, unlike the long half-hour or more roasting in the oven that I usually do. The cloves turn out a little drier and darker, but for any recipe that incorporates roast garlic instead of relying on the presentation of whole cloves and/or head, I recommend it.

Technically, the dish as a whole is called "widowed potatoes." I don't know if the potatoes are widowed because they are made sans meat, or if they are the kind of potato dish widow(er)s would eat, meatless because of poverty. (Apparently, fishies do not count as flesh in this naming parlance. I'm not responsible for this oddity.)

Whatever. Yum.

I have leftovers. I usually dislike leftovers. Not this time.

I have a feeling I'm going to be making this a lot. Unless I suffer from my usual severe case of beginner's luck and it's never as good again.

P.S. I warned you! I could make you chicken soup with lemon and egg to make up for it. And tapioca pudding. I still have a huge box full of tapioca I need to use up...
