get as many (or a little bit more) potatoes, cut 'em bite size, and roast them with rosemary, olive oil and garlic heads.

Slice 'em about an inch thick, coat them in lemon juice, butter and brown sugar. bake 'em for half an hour, flip them over, apply more lemon juice, butter and brown sugar, bake for another 20 minutes. Yum. Tart sweet buttery goodness.

Parboil them, slice them, layer them with sliced apples, butter, cinnamon, and sugar, then bake. I haven't done that in too long.

If I didn't just bake them plain and eat them with butter, I'd mash them with (honestly) vanilla, cardamom, and fresh lime juice. I got this combination years ago from Chelsea Quinn Yarbro, and it is ambrosial.
